    Garlic Honey and Lime Prawns

    Serves 4 

     

    Ingredients

    400g large prawns

    1 tablespoon olive oil

    1 tablespoon melted butter

    4 cloves garlic, minced

    2 tablespoons honey

    1 1/2 tablespoons lime juice 

    3 dashes cayenne pepper (optional)

    chopped parsley (optional)

    1 packed of stir fry vegetables

    240g brown rice

     

    Method

    1. Start to cook the rice according to packet instructions.
    2. Rinse the prawns with cold water. Drained and set aside.
    3. Heat up a skillet (cast-iron preferred), add the olive oil and butter. Add the garlic and sauté until they turn slightly brown, stir in the shrimp. Stir and cook the shrimp a few times before adding the honey, lime juice and cayenne pepper if using. Add the packet of vegetables. Cook the prawns until the honey lime sauce thickens.
    4. Serve the prawns, vegetables and rice.
